One note for those using premium chippers like the Mackissic, older TroyBilts, or maybe some of the DRs: These machines have different sized discharge grate options to affect the size of the product. If I want larger chips I sometimes remove the discharge grate completely. The material spends...
I have been making most of my own chips for quite a while. have a particularly sweet machine for it. It's an early 90s Super Tomahawk from TroyBilt. 8HP with a chipper chute and 16 swinging flails for the shredder chamber.
I don't think you have to worry about other woods being previously...
You can smoke other meats with peanut hulls and I sometimes do use them on beef and pork but peanut smoke is on the mild side so I mix some hickory, apple, cherry or sea grape with them when doing that. I smoked some burgers tonight with sea grape alone and it was a mellow smoke flavor. Milder...
Good choice. I don't know of many mods that are actually needed. A search will bring you some info. The only thing that I have done for mine was stone simple. I put a ceramic tile on top of the smoker box in the right rear of the smoker. This is said to improve on the inherent "hot spot" with...
You are most welcome. Enjoy that smoker! I'm trying to get some chicken leg quarters defrosted for my afternoon smoke. I'm ready to go but the chicken is not. I plan to smoke with peanut shells. I have found it to be a great smoke for chicken or fish. Peanut shells make smoke fast and easy...
There are lots of "tricks" you can do to keep the smoke coming if you are staying with the smoker. I learned with mine to not soak the chips for long. They take too long to get smoke from them if I soak them for a half hour or more. I soak them for no more then five minutes. You can keep some...
Webber kettles are wonderful. I hope things go well for you. My dad smoked with a Webber upright smoker and it was good but took a lot of attention keeping the temperature where it needed to be. I bought a MES 30 a few months ago and have really enjoyed how easy it is to do my smokes in the...
No matter what MES unit it is, it's a great deal if it's in good working order. You might want to ask to do a demonstration run through a heat cycle before you drop the cash though.
I'm jealous. I fished for Wallys all my life until my Wally fishing' buddy (Dad) died in '95. That is some very fine eating fish. I never tried any smoked since they really don't need much enhancement but I'm all for trying things new and different.
I'm a life long fishing guide in SW Florida...
That is one fine looking little smokin' buddy you have there! That pup looks just like my female English chocolate lab, Mochatoo. Is that an English chocolate? Mochatoo is a great smokin' buddy for me but I do have to dudget in time to "whack the ball" while we are smoking. LOL
I've enjoyed this thread of your build very much. I'm glad you bumped it up so I could find it.
Very impressive work and combined with your skills it sure is a winner!
I don't think you are getting the best data when taking the temps at the vent. The MES is well insulated and holds heat pretty well. The temp at the vent would fluctuate a lot depending on whether the heating element is cycling on or off.
You want to know what the temp is at the cooking racks...
