Very cool... Because of this post, I'm going to attempt my first cheese smoke this weekend. I've got some extra sharp cheddar, some colby, and some Colby-Jack cheeses. How long do you usually let the cheeses rest after a smoke before you cut into them? I'll probably not be able to wait that...
Yeah, good luck with that... My wife has told me that if it don't have a USDA stamp on it, she ain't eatin it. I've even tried sneakin it in stuff. I think she has one of my kids telling her when I thaw some out and she just doesn't eat anything I cook for a week or two just to be safe.

Locally because I never plan anything ahead... And usually when I want to smoke something is right when I find out that I'm out of wood...
I'll likely order some from Todd, but I want to keep my options open.

Now, I know they have great service and everything, but I really need a local place for pellets. I know I can go to Tractor Supply and get corncob pellets, can I also get wood pellets...
I didn't believe it either, but it was there, all mixed in. And it was about a year ago... So I don't know if it was a one time thing or not. But it's definitely not a one time thing at HEB. I've found them about 3 times there. Marked Prime and sold at the Select price.

I agree, smaller chunks and a different wood will probably help you. You definitely don't want thick, white, billowy smoke anywhere near your Q!
We've all had the smoke indigestion from this at one time or another btw... :)
You could just cut the flat off and smoke the pieces separately. Would cut down the time of the smoke. I've done that before too, but suggest if you do, use some of the fat trimmings (not a lot) from the top on the flat. You can remove it after a while, but it'll keep your flat from just...
