Building a Mini Weber Smokey Mountain in Texas (Mini WSM)

that's an awesome build! I'm sitting next to my mini i built last fall while I smell the TBS from a brisket flat on it. I also have a 30" MES which I really like, but the mini is my go-to. I love it. It's rock solid at holding temperature and bounces back in a couple of minutes when I put the...

Cold Smoking with a Masterbuilt 30" smokehouse using the element?

I just smoked a bunch of cheese yesterday with my AMNPS. Turned out perfect.  By the way, if you have a new MES, I think you would find that the AMNPS is the perfect complement for it. I have a MES30, and I hardly ever use my MES without the AMNPS. I am also not a paid spokesperson - just a...

I'll tell you, I've had this MES since last spring and I'm more pleased with it all the time, especially...

After ~11 hours the IT reached 202*. I set the MES on 100* and let it stay (foiled) on the smoker for about 45 more minutes. It coasted up to 208* IT, just like Bear's. Rested it for about 1/2 hour more, then commenced pulling. I sure do like those Bear Paws.  This pic is right after I took off...

Happy, happy, happy . we've got a gathering coming up at church where my wife and I were asked to bring BBQ pork. We were both delighted for her to turn that responsibility over to yours truly... And we also have some visitors coming from Oklahoma for New Year's. Once word gets out, I probably...

No sir, just enjoying the day and letting the MES do all the work!  After almost 9 hours, I've got the pork butt foiled... here's a pic, but there's not much to see at this point.
