120 Gal RF build. First build advise welcome.

Remeasured my tank. The rolled steel area is 54in and each end cap is 6.5 to the peak. This will change my numbers a bit but not too much. I also am a bit confused on the chimney placement. How far to place into the smoke chamber. I was just told that I may want to consider stainless for the...

120 Gal RF build. First build advise welcome.

I have been a member for a while now and have done lots of research on RF smokers. I got a 120 gal tank out of storage that I got from work and it measures 24x64. My neighbor got me 3/16in steel plate from where he works. I have 6pcs 2'x2' that I will make my fire box out of. It gives me 143%...

Can't seem to get Boston Butts right.

I did the same thing when I cooked my first one. I thought it was like ribs, I took it to 165 then pulled it off. Then I read to take to at least 190 I could belive it. What a difference pulling it apart. I also cook mine uncovered the whole time. Always moist and taste great. I always get...

I LOVE my new Weber 18.5 1-Touch Gold!!! Did some WINGS today!!!

I got a 22.5 Webber Silver last year. It replaced a cheap Kmart grill that I used all the time. I could not believe the difference in a Webber. I love the thing, More constant heat, I get better smoke out of it. I can control the temp better. Well worth the money.

After first fail tried Brisket again

Sorry about that the temp is not a dual probe. The top temp is what you set in it as your goal temp. The 383 is just a number I threw in it to get it to quit beeping because the beef setting is programed at 165 and at first I use it to read temp in grill until towards the end of cooking I put it...

After first fail tried Brisket again

Sorry but because I am a new member I couldn't finish putting up pictures until my post was reviewed. My wife bought me this for Christmas. My grill is about 300ft away at one end of the property. This makes it great to watch temp epically now when its 10degrees outside. Looks like its time...

After first fail tried Brisket again

My wife found a small Brisket at Giant Eagle so she bought it. I tried one over the summer but I under cooked it and figured I'd try it again. I am still trying to read up and get info on different cuts. This was only 2lbs of I believe a flat. Cooked on my Weber 22.5 kettle. It was rubbed...
