    Apricot Ginger BBQ sauce

Ok, I just made the BBQ sauce according to the recipe. Close enough for horseshoes. My daughters would be proud that I finally wrote a recipe down. Next modification is to replace the brown sugar with the preserves. I want more of the apricot flavor when I make pork chops. .

    bourbon garlic marinade for steak

Just so you know, I usually only have this sit for about 2-4 hours.  The alcohol 'cooks' the meat if left too long.  I had these sit overnight, since I didn't have time to do a reverse sear last night. This was my first reverse sear.  I also seem to have a thermometer off my at least 10 degrees...

    bourbon garlic marinade for steak

More medium than my prefered medium rare, but they did taste good. The bourbon does a good job tenderizing the meat.

    Soooo Many Choices

I like wood splits better than the chunks, they seem to burn longer.  I'm still trying different chunk charcoal to see which burns the best for me. The last smoke I just used charcoal to start it and burned wood splits the rest of the burn. Kept the temp in my Char-Griller very stable.

What you all smoking tonight, this weekend?

I wish I was in front of the smoker this weekend. In at a conference for work. I may be cooking something up mid week.

    Soooo Many Choices

David, I planned on writing a review on the char-griller as soon as I used it as a grill.  My youngest's birthday is coming up, and that is a day for quick grilling.  There will be a whole lot of brats, dogs and burgers that day. Not a day for a long cooking session. I even have plans to use the...

    Soooo Many Choices

I just purchased a Char-Griller Pro with a side firebox.  I will admit that I did get it for the large grill surface, smoking was going to be a secondary option for me.  I have yet to grill on the main surface.  I will admit that I don't know much about smoking meat, but I really like the...

    smoked legs and thighs.

I do know where Gibsonburg is, my sister lives there.  About 2 hours from me. In fact, seeing that Gibsonburg is such a small town, you probably know her.

    Apricot Ginger BBQ sauce

Before smoking my chicken legs and thighs today, I decided to go with a sweet spice flavor through the whole process.  This included Chinese 5 spice in the brine and ginger in the rub.  I started making my mother's BBQ sauce, but in mid-stream, I went in a different direction.  I enjoyed the...

I'd love to share, but I need them for a gathering tomorrow. I only got that one thigh to try it before serving. I'm having sausage burgers tonight.
