    I did grab it, Old Sarge! It will be a good addition to my Weber Performer and RecTeq RT-1250. I have tried (unsuccessfully) to cook sausage with those, and so the CookShack will be my go to sausage cooker, and warming oven on occasion.

    Taste, texture same as oven baked bread. AS 02ebz06 said, the high heat eliminated most of the smoke. Next bake I may introduce a bit of smoke on the second bulk fermentation. Bottom line, the pellet grill does a great job baking, and keeps the heat out of the kitchen on Arizona summer days.

    Not a baker, and certainly not a cook, but tiring of the price increases on sourdough bread, I began to bake my own. My new Recdeq pellet grill seemed to be a candidate, so this morning it proved itself. Easier than the electric oven, and no heat in the kitchen.

    Thanks everyone for the great suggestions. I've decided to go with this 3D printed holder. Eliminates the kinks, and readily identifies the connectors as to the PID. (RecTeq, Spider Venom, and Maverick 733 all have different sized connectors.)

    I purchased 3 of the Thermoworks Silicone Probe spools @ $8.95 each, and they are nice with magnets to hold. Problem is, they're for the new "skinny" probes. I would need 5 more at $8.95 each. Think I might find some empty wire spools that "might" work.
