    The easiest way to find out if it's your rub, is to cook a side (or even a single rib) without. And yes, any sugar in the rub will carmelize (ie: blacken).  Try a basic rub (salt, pepper, paprika).  Introduce the sweet in the foil, baste, or with the sauce.

    I'd think simply spraying metal surfaces after use with PAM or similar would help protect the bare metal.

    Costco vs Sams

    I've always been extremely happy with the meat selection at Sam's Club.  We just joined Costco and let our Sam's membership expire (don't do enough bulk shopping to justify two memberships).  Haven't tried any meat from Costco yet.  After reading this, I'm second guessing our decision.

    The seasoning process for my Brinkman Grill was to wipe all outside surfaces with vegetable oil and then get it up to temp for 45 minutes.

    I typically add a few hours before cooking.  Having said that, if you don't like the taste, change your rub or use less rub.
