Wow everyone, thanks for the great words. I did another burn last night using some of the kind words bestowed by you guys... and i've learned one thing... that it doesnt take much to affect these drums.
I sealed the door up as tight as it would go and it's air-tight. I only used about 6-8...
Do you mind if I ask a question about your drum? How tall is it and how much clearance do you have from the basket to the food grate?

I used the minion method. I did about 1/3 of a chimney full to start with and dumped it onto the coal. I used Kingsford Original (Blue?) and then placed it into the barrel, it wasn't too hot from the get go, but rose to 250 within 5 minutes.

Not being critical, just curious! Did your fatties burn on the bottom? It looked a little black, the only reason I ask is I just acquired a UDS and am concerned about distance from the coals and whether or not I need to install a water shelf...

Those look great! I've been wanting to try some ribs with a kick but so many people in our area prefer sweet... you've convinced me! I'm picking up my new UDS this weekend and ribs will probably be the first thing I do!
