I need some input on my reverse flow temps (UPDATE)

I first learned to smoke on my brother-in-laws reverse flow (and still use it often), and its almost exactly the same size as yours.  One big difference we have, is a water trough.  There is a water trough (about 1.5 to 2 inches deep)welded in about 4 inches below the grates (the bottom of the...

    Spilt or chunky?

First off, welcome.  Now on to your question... that's really going to depend on the smoker and woodbox.  I'm guessing you are using something like a charbroil smoker with a small offset, and in that case your main heat will come from some sort of coal (traditional or lump) and you'll create the...

Need some more suggestions for Appetizers I can make

I did some armadillo eggs the other day after a post I saw on the great SMF... took a halved, seeded jap and overfilled it with cream cheese (that has some seasoning mixed in) and wrapped the whole thing in a layer of JD hot breakfast sausage... oh man those things were great!

I need some quick dinner smoke suggestions for tonight!

I love a fatty as a main dish... and I've seen folks do a pizza fatty, then after its done wrapping it in pizza dough and tossing it back on, and BAM... Calazone fatty time.  You could find it if you did a search. hmmm, other than that, chicken is always a winner for a quick smoke in my book. ...

    Doing my first chicken

I'd stay away from too much hickory or mesquite... in my experience chicken is pretty good at picking up the smoke flavors, and those are stronger than the rest.  That being said, I love mesquite and wouldn't mind using it for a little while, or in a small amount.  I've never used a beer can...

How and why did you first start smoking meats?

I grew up eating good, but we were definitely were a conventional cooking family.  I liked to grill, but in the south, so does everyone else.  The fascination came when I began dating my future wife.  Her family didnt smoke either, but her father is Polish... so began my love of hearty meals...

    what cut for pulled pork?

Go with the (Pork) Boston Butt.  That'll most likely be how its marked in the store.  I prefer bone-in myself, but its preference. It also a portion of the pork shoulder, so a shoulder would work find too.  The night before the smoke I'd cover it in olive oil (or more preferrably around here...

    Mac- N- Cheese

we did a "smoked gouda mac 'n cheese" the other day.  Real simple really.  Just cooked the elbow noodles, then slowly mixed in gouda chunks until they all had melted (amount of Gouda varies due to your taste).  Added some milk as needed to loosen things up. had it open on the smoke for an hour...

    Turkey Fattie with Q view

I just make a breakfast fatty out of turkey sausage (ground Turkey) this last weekend.  No qview, but it turned out well.  Had eggs, cheese, and a diced piece cooked turkey bacon as the filler.  I try to use enough filler so there is no more than 1/2 inch of sausage on the border of the fatty...

    Birthday Fatty

Breakfast fatty is the way to go my man.  Its just what I make the most often.  This last weekend we even made one with Ground Turkey instead of JD... and it was great (alot healthier too). I recommend making yourself a fatty piston, it'll help tremendously!

Well guys we are a pinch of this, smidgen of that, kind of cookers.  The ingredients are simple.  Small avocado chunks, diced red cabbage, salt, pepper, garlic powder, lime juice. Also, you can add diced white onions if you feel led to do so. Other than that its mostly to taste.  We...

    redneck taco

we didnt do the cornbread pancake (which I understand is the unusual thing here), but a competition we were in allowed us to sell anything except pork butt (it was a butt only comp) the friday night to the masses for our own profit.  We decided to do pork (loin) and chicken tacos... we had a...

    First time using UDS

I have just completed the third burn in my new UDS.  The first time I had the same exact problems you've listed.  my solution... less starter coals. I went from about a third of a chimney (probably 15+ coals) down to about 6-8... and man it worked like a champ.  I've kinda gone at the target...
