    My First Ribs!

I never checked the IT. I left them on for 3 hours, took them off and foiled them, then after 1.5 hours in the foil I checked by twisting the bone. I guess that's the bend test. They seemed pretty tender so I sauced them and put them back on for an hour to set the sauce. I didn't use the snake...

How to stop chips from igniting?

Wrap a handful of chips in aluminum foil, and poke holes in the top. Then the chips will smoke but not have enough oxygen to fully ignite. Works great!

Smoked my first ribs this morning! Stuck to the classic 3-2-1 method since it was my first time, but honestly I’ll do it the exact same way next time because I love how they turned out. Cooked on my Weber performer kettle with charcoal/hickory chips and a water pan down below. Olive oil and lots...

Help: What temp do I trust

Alright good to know because I’ve been following the probes. Just didn’t want to end up cooking these at 400 for 6 hours lol

Help: What temp do I trust

Currently smoking my first racks of pork spare ribs on my Weber performer kettle. It has a therm on the lid, and I’ve got two probes near the grate. My probes are reading 225, but the lid is reading 400. I figure I should just trust the probes but maybe the best thing is to average the two temps...
