    I have a ECB upright R2D2 looking smoke and grill. Charcoal Smoker What would be the best for cold smoking some cheese with it? the A-MAZ-N Tube Smoker or the regular one? and what size? Temps are gonna be low this weekend so it will be perfect for smoking some cheese, hopefully it stays that...

    How often should you change out the sand

    I wouldn't add any water to the sand. As for changing it out-as long as it stays covered with foil and doesn't get any drippings on it, it should be fine for a very long time. Hope that helps. Edit: someone already beat me to it.

    Those small ones like that (when I could find them) are what I practiced smoking brisket on till I got the courage to tackle a full packer!
