I have the Traeger Junior Elite pellet smoker. Cost me $400 and came with a lot of nice freebies. I like the fact that when I use it, it is set and forget (except for refilling the pellet hopper for long smokes) Never had any problems with it, have had it for a year and half now. I don't mind...
I don't have a vac-seal set up (yet) but I reheat frozen pulled pork rations in the crockpot. I just add a bit more finishing sauce so it doesn't dry out.
Oven- I'd put in a foil pan, cover with tinfoil, add some sauce. Set oven at 275 for about 45 minutes.

I've used the Jack Daniels Barrel chips and the charcoal pellets, They are awesome, great flavor. I buy them at wal-mart. A little more than I'd like to pay but worth it IMO.
I had a similar situation with a turkey breast I thawed out overnight. Things came up and couldn't get to it till next weekend. Similar I say but not exact. It was still in its packaging and hadn't been injected. I just put it in the back in the fridge, at the very back where it's coldest...
If I may add one more thing.
I use my Garage as a staging area also when doing a large amount of food in the WINTER. Its colder than my fridge but not freezing either.
A few years ago when I was still getting started and using my ECB I quit using water in the water pan and packed it with sand after a lot of reading on here. Also as for meat, I take mine out about an hour ahead of my cook to warm up a little before putting in the smokers I have now.

When camping I like to find a large, flat as can be found rock. wash it off in the river/stream/lake. then when the fire has a good bed of coals I place the rock on them till its nice and HOT and cook on it. Thats how I would cook a fattie while camping, but thats just me.

Great smoker build. I love watching you guys that are talented enough to do these things. I have plenty of tools but lack the talent. I would love to do my own someday, whether it be a metal one like yours or a brick smoker that I have seen on here.
