    You may be OK since a new smoker will cook hotter than one than has been well seasoned. Lets see what the lowest temperature is after 3-4 smokes.

    FYI, Maverick Support told me a while back that you could use more than one Maverick wireless unit at a time. The trick was to sync them up separately. The batteries last a long time.

    Smoked Boudin

    I eat a link of boudin every Monday morning even if I am not hungry. It is one of my favorite cajun foods. I've had shrimp, crawfish, blood, smoked, and regular boudin. So far my favorite is the regular follow by smoked. The better boudin I've found usually always comes from the Acadiana area.

    I wipe mine down only with a damp cloth and they never get exposed to more than 350F. So far my two Maverick ET-7 probes have made it thru about 10 smokes and they are still working correctly.
