And it is done. Don't mind saying, I am just a little impressed with myself. Thanks for all the advice. One mistake I made was buying a butt wrapped in cord. I should have removed it before I smoked it. When I cut it and pulled it off, it took a lot of the bark with it. The remaining bark is...
Ready to smoke my first butt tomorrow. I am hoping to get a bark on the butt. I really like the bark! Does wrapping in foil during cooking or while resting do anything to the bark?
Ok. Sold. I am going to buy an AMNPS soon. Do you buy your pellets from the same place? Are there different kinds, like hickory, apple, etc.? Will I be throwing my supply of chips away, or will I still be using them at times? Looking forward to trying my hand at a pork butt soon!

I was thinking of building something like this for my MES 40. Possibly integrating it into a larger unit that would also hold my grill. Do you have any problem with heat build up inside the structure? The manual says 10 FEET away from wooden structures, but that seemed a bit extreme since I...
Thanks for the help. I was looking at a Smoking Time and Temperature chart that told me 155 for medium. Doing smoked burgers tonight. I will leave out the water and keep the vent open.
