    So you smoked it 9 hrs and got it to 187, it will take a few more hours if you cook till 200.  Then you can easily rest it 2 to 4 hours, longer if you wrap it in a couple layers of foil, then wrap in a beach towel or blanket and put in a good ice chest.

    Adam the smallest brisket I've cooked is 10 lbs so I'm guessing.  I can't control temps on my smoker either but try to keep them around 250.  If you haven't cut it yet leave it the whole 3 lbs, you are going to have it shrink anyway when you cook it.  A 1 1/2 lb brisket may cook under 2 hrs...

    Hi Adam,  sounds like you are smoking a small flat.  You're right you probably won't have to worry about left overs.  Flats can be difficult to cook in that they tend to dry out easily, so plan on wrapping after IT  of 150-160 degrees.  Average smoke time is 1-1 1/2 hr per pound at 250 degrees...

    Have never cooked on an egg, but I would believe the Igrill thermometer more.  Also, the two thermometers are sampling 2 different locations, 1 on the grill (closer to the heat source), 1 on the dome so probably some difference in temperatures.

    20lbs is a BIG brisket.  You could wrap it in foil and that will help it through the stall, otherwise keep putting heat to it and the temp should start climbing again.

    If you freeze them be sure and allow enough time to thaw completely.  Both methods above probably work, but if you slice you  have to put it in some form of  liquid to keep it from drying out.  I prefer bmaddox method, reheat the whole brisket and then slice as close to serving time as possible.
