A must have BBQ / smoking book

Smoke and Spice by Cheryl and Bill Jamison is a great cookbook for BBQ. I have not gotten Jeffs book but plan on it soon.

    Propane smoker as an oven

I  have a MB Dual Fuel smoker. To season it the instructions were to heat it up to 400 and keep it there for 30 minutes which my smoker did at temps of 30 degrees. So 350 would not be a problem IMHO. That is one of the benefits of a propane smoker.  Just my 2 cents.

    Newbie question...

I just did my first pulled pork on NYE.  I did a boneless 4# pork shoulder, so my experience is different. Here is my 2 cents. I did mine at 225 temp (center of smoker digital probe temp),  for about 4 hours it hit 150 degrees internal temp then I wrapped it. I turned my heat up to 250 for 2.5...

    My First Butt

My Belly is Full and I am happy. I foiled the butt when it hit 150. That worked well temp slowly reached 195 in about 2 hours. Only problem I had is when grabbed the butt in foil I tore the foil. Had to add another layer of foil. Wrapped it in a towel and dropped in a cooler to rest for an...

    My First Butt

Taylor Therms $20/ea at Lowes.  They are not wireless RF.  I can see them from my patio window so no need for RF and I tried two other types that failed. So I am happy. Just waiting for the internal temp to get up to 150 then foil.

    My First Butt

I have smoke briskett's, chicken, ribs, and even a tri-tip.  I asked my family what they wanted for me to smoke on NYE and my daughter leaped up and said "Pulled Pork" her favorite.   So I did some reading and called my local Meat Market. I decided I would do a 4# bonless pork shoulder. The cut...

Adding Charcoal in the Wood Pan

I have a the Masterbuilt Dual fuel smoker and one of the benefits I thought about was that i could add charcoal if I wanted. It also provides a back up if I run out of propane, I usually have a spare tank but I have been caught with just one tank when grilling. So the Dual Fuel was a plus for me...

Does Foiling Butt Cut Time Significantly?

This was some great information thanks for sharing. I forgot about foiling when I smoked our Christmas Turkey Breast. I could have saved my self some grief foiling at 150. The joys of smoking live and learn.
