I have a ECB (Brinkmann) smoker. I have been smoking sausage and bacon.
My question is, is it important to use the water pan within the smoker? If so, why?

Ok, so I returned from Texas with lots of goodies and also a gasket to seal the lid so I can retain the heat and smoke. I also got a thermometer for the ECB so I can see what temp it is running.
My question is where is the best place to place the thermometer? In the side of the lid next to the...
I have an ECB and I hate it! Hate is a strong word...i find it frustrating!
I want to make some mods to it like putting a gasket around the lid to seal it properly.
Does anyone what type of gasket I should get? I have been looking online and I think I need a door seal or something like that...
