You should foil it when it hits a IT temp of 160 then finish it off to your final temp, take ir out of your pit, wrap it up in a couple towels and let rest about 1hr before slicing.
Keep exhaust fully open,close off intakes to lower temps,open to raise, take out some of the hot coals or wood what ever u r using, when adding wood add small pcs not big that way u won't have temp spikes. Need little more info on what your using this is just basic all around info
Try Waltons Rick their 19s are only 128 per caddy, I get 17s for $136 and I started soaking mine a few weeks ago when I was at the end of my caddy and they seemed a little dry and brittle. Does the trick!
Any one have a idea on why my cooking time for slim jims in mysmoke houses is half the time it takes in my MES 30 ? And I was limited to. Only doing 5lb at a time in. The MES. I'm guessing just overall better air flow??
