I think I am the 1st person....drink when I smoke. I enjoy it, but for now I don't need the additional pressure of a new business, making sure everything turns out good, etc, etc.

The unit includes:
7.5' smoker (w/ top baffle system)
2'x3'oven w/ seperate heat control
side firebox w/ propane option in main chamber
4 sinks w/ water pump for catering
commercial grill(never used)...

Unfortunately I wouldn't call mine experimenting.....when I do that I write everything down so I can "track" where i went wrong.

Well most of you don't need this kind of lesson..... but I did.
I did a brisket and two racks of ribs yesterday on the vertical. The problem was.... EVERYTHING!
First off I didn't rub the meat the night before, which is what I usually do. I got a "good deal" on some cheap spices, used those...
BTW, be forwarned, usinfg a NB offset may be habit forming and lead to the use of larger and more dangerous smokers.

Not sure the wife will let me smoke for 3 more hours today(we have a 2 yr old)... I was just going to throw them on while I heated the ribs. Oh well I can do them next time.

I am having a stainless fridge added and full canopies. The canopy I have now only covers the smoker.
I am going to try these little dudes for the 1st time today.
I assume you slice the japs de-seed and stuff w/ cream cheese, other ingredients, wrap w/ bacon and smoke?
