Ok just remember everytime you tinker or move the smoker body, etc you are giving air to your fire which will heat up the coals quick. What kind of wood are you using? You mentioned before your last smoke had a bad flavor? When I cook I do see smoke but its not billowy/camp fire, but its not...
Sounds like your chunks of wood are on fire?? Are you using the minion method for this cook? I always try and put my wood chunks away from the lit coals and have them slowly heat/smoke. Are your temps way high? Hang in there.

Damn ok this all makes sense. I did find a guy who has them and they were used to store apple juice and are food grade. But he is about 90 miles away and my only hope! So I'm gonna plan a road trip. Thanks for your help and I'm sure I will be bugging you all again.

Check out the Char-Broil Double chef water smoker. I have one and I recommend it. There is also a thread here some where regarding it. I got mine from bargain outfitters for $69. Better than the cheap brinkmans for sure.

Very nice smoke!! How do you like the lava rocks? I'm getting tired of filling my water bowl and if really doesn't add anything to the smoke I would like to nix it. Was thinking clay pot but now I have to look into this.
I'll be 33 in April and have been smoking for 3 years. Started on a electric ECB, upgraded to a smoke vault last year and just got my first charcoal cooker last month. Learned a lot from this site and I love this hobby!
