Greetings Dutch!
I've been missing you. Those look like some mighty fine ribs and unless I miss my guess, those are some of your wicked baked beans on the side. Good to hear from you.
Jeff's finishing sauce is the best! He's a really great guy and I really really wish he were still active on this forum. Thank you Jeff for a great sauce. I use it on all my pulled pork.
Thanks for the post. I have been wanting to smoke some cheese for quite a while. I has finally cooled down outside so that I can do it and your post just put me in the mood. I have an AMAZNPS so I'll get some cheese and give it a try. I look forward to hearing about your results and perhaps...
Man! This is a small world isn't it? I like this forum more every time I sign onto it. Meeting really interesting people, like yourself, is just one of the perks. All the info on smoking is certainly the main objective but there are a lot of perks as well. And I've been a regular since the Yahoo...
Hi Bill,
Again, thank you so much for sharing your recipes and your smoking process. I'll certainly give the recipe and process a try and hopefully come up with some BBQ like that out in the eastern part of NC. Like I said, I grew up on it (Sanford, NC) and still prefer it over any of the...
Thanks for the recipe! I grew up eating Eastern NC BBQ and always strive to duplicate it. I have not yet made the grade but I keep trying. I'll give these recipes a shot. Also, a question .... how do you smoke your butts? I use hickory chunks and no sauce during the smoke ..... only a good rub...
I think that's a great idea! I wish I had the ability to think of different things like this. I'm just wondering if it tasted as good as it looked. Great post ...... thanks.
hvac81,
Just wondering where you are really from. SC is a large state and the BBQ varies from place to place. I went to school at Clemson and really have a deep respect for the state (Go Tigers!!). Anyway, welcome to the forum and I hope to read lots of your posts and view you pictures.
Welcome Keith!
You're right in the middle of some great BBQ. I grew up in Charlotte and I know there are some really good BBQ places in your area and to the east of you. Sounds like you have a really good group of folks to work with in forming your team. I commend you. I was never able to...
Steve,
Great post. I will be doing the thighs this weekend! Also, I really enjoyed visiting the "Black Peppercorn." You seem to really enjoy cooking and I commend you on your efforts and results.
Hi Jonboat,
Tanks for the post. It sounds like a lot of really special memories of a different time. I was surprised to see that you guys in NY ate Carp. I didn't realize they were in the North. I grew up in the South (Eastern NC) and if it hadn't been for Carp and Catfish ....... and a...
I was doing a brisket not long ago. I had everything set and well progressing. Unfortunately, I dosed off and didn't wake up until the next morning. The brisket was way overcooked ........ hard and dry. It was barely edible but not very good. So, yes, you can definetely over cook a brisket. But...
Welcome Bravodelta!
We've been waiting for just a person like you. We look forward to you posts and pictures. Hope you enjoy the forum as much as I'm sure we will enjoy having you aboard.
Chef Jimmy J, (and others)
Thanks a million for this post. I love that chicken and will certainly try the recipes. I've been looking for this for quite a while.
