I realize plateaus can be long but I think I may be on the verge of too long. I'm in the mid 140's on a butt. Been keeping the smoker between 225 and 240 like I read here. I think I been at this point for 3 hrs. Too long?

I don't know if my digital is an Accurite or not. It was a cheapy from Walmart. Anyway my unit didn't work with brand new batteries. I noticed that one of the batteries was not making contact on one end. I put a folded up piece of foil in and it has been working since. I know I shouldn't have to...
Johnny is my boy. He is a 9 month old border terrier, not border collie. He is the guy in my avatar. Below you see him sleeping during our first fishing trip together. Also the second picture is him obediently staying for a photo op in front of the new gosm.

This may be a really dumb question but I'm going to ask anyway. Is there a special process for the actual pulling of the pork? I have seen all kinds of posts on the cooking of pulled pork and the finishing sauces, but nothing on the pulling. My first butt I sliced. I am now ready to do pulled...
Question, I have come to find out that probably my next mod must be side shelves. I have been just wheeling the smoker up next to the grill but not crazy about that. I saw Trent's mod posted on 6/1. I really like his and they look great. But to be honest my gosm purchased at $150 roughly is...
Those pictures are fantastic. Now I'm really motivated to try a brisket. My wife has been just luke warm about my first two smokes. But I know she likes brisket. I have a gosm. Probably won't be able to sear like you all with the wood and charcoal burners. Thanks for showing your progress and...
Great job on the mods. Thanks for the pictures. Lots of people ask about the needle valve mod, I just did mine last week. I know the Bayou Classic is one way to do it, but it can all be done at the local hardware store. One thing I found is that many of the standard grill regulators are 3/8 pipe...
I want to say how much I appreciate this site. At times, early, I was hesistant to ask things knowing they've been covered. As many know it can take a while to find those previous posts. I have been met with nothing but patience here. People have been so helpful. I think the fact that the "OTBS"...
If you are using a gosm like mine your regulator fittings are 1/4".You can pick up a 1/4" needle valve in most any hardware store.I saw mine in Lowes,Home Depot,Menards, and I bought it at my local Hardware Hank store. The regulator is 1/4 pipe thread, your needle valve will be compression...
Well my first 2 smokes with my gosm wide body were tough.Couldn't get the temp up to what I wanted.I got a lot of help from people here with no positive results.I was about to take it back to Wally World but decided to call customer service. I now have control from better than 400 down to well...
I served for 3 years with the 1/26th Inf Battalion, 1st Infantry Division. My years of service were from 1977-1980. I served my time in Germany. I worked as a mechanic in this mechanized infantry unit. I only worked as a mechanic for a year following my ets. I went to Iowa State University and...
Great job. Thanks for the picture. By the way I just added wheels on my gosm today. It sure makes it easy to move around as I keep doing these mods.Once I quit tweaking I may not need them as much. LOL.

I sure like to tinker. My new gosm has offered plenty of opportunity to make mods that make it a better smoker. I was wondering has anyone added wheels to it. I have been thinking about doing it.Any ideas?

Thanks for the help guys. Now everyone will think I'm crazy on this one. I was surprised how large a pork butt is. The smallest I could get was 6 3/4#.Since this is my first smoke I thought I didn't want to invite alot of people in to sample. Anyway, I cut the butt in half. I am smoking the half...
Hey all,
I have begun my first smoke.Pork butt. Anyway, I don't have smoke yet. I soaked the chips will that do it? I'm using cherry. Last night when I seasoned it, I used hickory and got a ton of smoke. I did get impatient today and put the butt in when I had maintained 225 for a while. I have...
Couple questions about my new gosm.Just got it seasoned and would like to smoke tomorrow. In the manual they mention cleaning out the "grease pan".I don't see that I have one.Got my racks, then the water pan, finally the fire box and of course down below the burner. I understand everybody lines...
All right, I went from seriously bummed to being the proud owner of my own smoker (GOSM). It is assembled. I'd like to season tonight and use tomorrow. The manual says nothing about cleaning it and of wiping down with vegetable oil. In fact it says to heat it at 125 for 45-60 minutes. How about...
