I am still really unsure about these things, while it tasted really good I had to hunt and peck to get any meat off of them.
is this because of the horrible cut of ribs I had or all they all like this?
Forgot to mention the rack at the top of the picture is covered with a rub recipe that I got from SD4547's youtube video and the one on the bottom is only back pepper and salt.

On my first Butt the stall nearly killed me I ended up having to throw them into the oven because my offset pit was having some serious ash accumulation issues and I could not keep the temp up. Stay the course they will turn out great!
