There are so many good smokers out there it all comes down to what you feel comfortable with. No matter what one you decide on I'm sure you will be turning out some great food and isn't that the main thing we are all trying to do?
Give a few a try. A lot of the organic breweries up here in the North West are using more cans. Smaller carbon foot print and such. The flavor from an IPA on chicken is wonderful!
Just the temp gauge on the smoker. I checked it with an oven gauge a few weeks ago and it was with in a couple of degrees. I won't worry about it then, just seemed odd.
I have been having trouble with my MES 30" Black smoker, There have been some pretty big temp swings going on, I have it set at 225 but the temp has been going up to 240 then dropping to 205 or so and repeating all day. The smoker is only a couple months old.
I also live in Boise. The only place I have seen the MES 40 is at Cabelas. I picked up a MES 30 without window for 173 at Lowes. They do work very well and can make some great flavor even when it is in the 20's.
