    Chipotle ABT's with lil smokies and ABT's with habenero cheese and lil smokies

    I did 8 japs yesterday, gutted and devained a little, added half of the seeds/veins back in, added garlic, minced and threw the cream cheese in.  They were almost hiccup hot, very good.

    Meat Probe, MES 40

    I foiled it for the last hour, took 12 to finish.  Bone pulled easy, pork was juicey.  I cooked until 207* on the MES probe, about 190* on the mechanical thermo.  Turned out great, won't have to worry about this too much longer.  Maverick is on the way.

    Finished.  They were very spicy, almost hiccup spicy :)  Very good, bacon wrapped shrimp on the skewers were crispy, almost over done.  Didn't really taste the shrimp the spice was over powering but very good.  That spice with a lil smokie instead of the shrimp would be great.

    So, I have a mechanical gauge and the MES probe in my Pork butt.  MES Probe reads 189* Mechanical Gauge reads *170 6.7lb butt has been in for 9 hours so far.  Which should I go by.  FYI, I purchased a ET732 today....lol

    I think if your IT temp would have been low like it would have been in the Fridge then you would be safe.  Never know until you check though.  Did you inject it at all?  Better safe than sorry getting sick, $10 is not worth the risk.

    Fruits on the grill

    If you can find the BIG peaches, cut in half, de seed.  Make a butter/brown sugar glaze, coat with the glaze and grill for about 10 min face down.  Turn it over, glaze again and grill for 10 min again.  Remove, serve a la mode and enjoy.  Didn't mean to hi jack, just love fruit on the grill ;)

    Was hoping and figured it would bark up with time.  Just sitting at my kitchen table watching the TBS come out of the vent.  I love it when a plan comes together.  Oh and I used about 6 cups of Apple juice and 1 cup of SoCo in the water pan.  Heated it all up before I poured it in the pan.
