Night before turkey prep and rubdown.

im no pro at this, but it looks like your gonna make it. i would check the bird at 160 in both sides and the legs, just to make sure the temp is true. if its good, mop it one more time, get your carrying gear together, and pull it in two degrees! im curious though, where are the ribs? in a...

    First smoked bird, EVER!

well, I wasn’t sure what I was going to end up with, but we all ended up with surprised, raised eyebrows! I started out with jeff’s Maple smoked BBQ bird, but I had to tweaked it a bit for a “soft mouth” in the family. I sprinkled thyme, and sage, I let it cook for an hour, and then started...

Night before turkey prep and rubdown.

you might be cutting it close. winterrider has a good point. fire up the smoker early, and make sure you can get that temp, and hold it. in the mean time, put it in the oven. think of it as a back up plan. my 14lb got done today in five hours, at 275-300.... and it was 34 when i started...

Question on 21 lb Turkey for Thanksgiving

i'll put my 02$ in. i am also right in the middle of my cook, on my VERY FIRST turkey, on the smoker. I did a wet brine for 24 hours, and I had to improvise on the seasoning. I couldn't use any types of pepper spices, due to a "soft mouth" in the family. i went with a buttery sage, and the...

I tried it both ways this time. one was up, and one was down. it didnt translate to a whole lotta difference on my cook. BOTH turned out great. a tuning plate in my OJH, is home made. its three 1/8' steel plates that i can arrange to "bleed" the heat, as i see fit for the CC. but the first...

Question on 21 lb Turkey for Thanksgiving

you always have the option of running a propane torch over the skin to crisp it up. im starting the brine on a 14lb tomorrow, and i plan on bringing temp up the last 45 minute for the skin, but if its not to my satisfaction, ill run a torch over the skin....this is my first try at poultry in a...
