Cooked my first CSRs today. Won't be the last. Cooked them in a pan in my Vision. Between 225 and 250 for 2 hours, foil and add some Apple juice back on for 1.5 hours, unfoil and glaze and back on for an hour. Some of the best ribs I have ever had.

The issue you are describing is really hard to understand. I sometimes get spikes with my WSM but I have never had any issues keeping the fire going. Could it be bad lump?

Very nice explanation of how you start your fire and manage it. What you are experiencing makes no sense to me. I have used a WSM for 5 years now and have never had a fire go out.

I have never had to lift my center section hot either, but the handles would sure be nice since I switched to sand. It is pretty heavy to lift by gripping the top of it.
I used to use water in mine. It definitely helps some with the temp control and keeps the meat moist but it was such a pain to clean I switched to sand. Put sand in the bowl and cover it with foil. Sand is a great heat sink and with the foil it's easy to clean. Just my two cents worth. I'll...

1) this is VERY well built. Used standard commercial K thermocouples.

Yes, but I got this one out of his book.. I have used that book all summer long and cooked a great variety of great food. I know several on here contributed so thanks to all of you. And to the newbies, if you don't have it yet, go buy a copy. You won't regret it.
