Competitions can be very subjective. I have found folks do not like heat and prefer sweet in my region. Presentation is big and appealing to the masses. Looks like you did great on that pork!
You can control it without the guru, but it does tend to draft and climb to roughly 285 over time. That being said, because the smoker is so efficient and well insulated the results are as good or better than lower temps. The moisture retention is superior.
Burn time is ridiculously long and depends on conditions outside. I’ve had it go as long as 20 hours on less than a full basket. About 2/3s filled. Roughly 20lbs of lump charcoal.
A lang 48 patio is more than that. I guess the question should be do you have enough room and food to cook on that pit? Is it reverse flow like the lang?
