Spares Seared First Then Low And Slow W/Qview Huh?

Spares are my favorite. I'm gonna watch this thread like I stared at my smoker for 8 hours yesterday...

    Added to the Family

I experimented with a couple cookie sheets until I found one that would fit nice over my firebox hole, and stuffed aluminum foil in any gaps. It's not a permanent mod, but it's really easy to clean and will be a good stop gap while I figure out something a bit more erudite. I agree about the...

Fourth of July Pork Shoulder w/Qview

I'm gonna try that for basting. I have a hunch that's why the last pic looks so glazed and... picturesque. Looks fantastic.

First smoke First ribs on the offset and Qview

This is the first time I've made ribs on a smoker. So, needless to say I'm pretty stoked. I had a rack and a half of spares from a local supermarket (Wisted's) and one half rack from a super market in another town (Joseph's). The Wisted's ones win. Way meatier. I smeared french's mustard on a...

    The best all beef hot-dog

When I worked at a dirty little greasy spoon I used to sneak home bags of the vienna beef bun length beef franks. They taste somehow better than the stanadard length vienna beef franks you can find at local supermarkets. But those are rather awesome too.

    best beer for BBQ

Depends on the meat, and the weather. Dark beers, especially ales, complement beef and pork, brown and amber complement chicken and pork, and the pale beers work with chicken and fish. Cloudy wheat beers give a nice contrast to anything. Other than that, what ever I can shotgun without barfing.

    Pepper Pollination Question

From my experience peppers like to be neglected. If you give them too much of anything, you'll get a huge pretty bush and barely any fruit. They like mediocre dirt, not alot of water, and some times I talk down to mine, like I would an arrogant child...

    Rogue Smoke Ale

I'll assume smoked barley. All grains (at least grass-related grains, the usuals being barley, wheat, and rye, in order of prevalence) are malted before being mashed. The grains are allowed to germinate, and are then kiln roasted to kill off any cellular activity and caramelize to the desired...

    Crab Apple Prunings? Grape vines?

Absolutely. You might actually want to tone back the sugar if they are that ripe. The only thing I know of that doesn't really taste good is the horrid grapes in my back yard. Carefull, when this stuff's done, it is deceptively easy to drink...

Do grinders get hot with use. Normal?

Any thing with gears and electric motors generates heat. Maybe it's just a matter of lubing it up real good. Or maybe a matter of looking elsewhere. Either way mine's my grand mothers old hand crank one, so either way I'm pretty sure you'd be comparatively happier.

It’s that time of year again, let’s be careful out there

Glad to hear your son is gonna be fine. It's a testament to his mindset that he kept his game face on after the incident and kept his safety equipment handy. I have too. Never bothered renewing my certification. Something similar happened to me 4 years ago. Little 1st and 2nd degree burns...

    Crab Apple Prunings? Grape vines?

My mom does this with just about anything ('cept crabapples so far) with fantastic results. Last she did was cranberry/grapefruit/orange. She stashes it away because she knows the family would guzzle it by the mason jar if given half the chance.
