I've used my horizontal offset for cheese using 2 or 3 pieces of charcoal and a small piece of wood on top but it's a pain. I have the best luck doing cheese with ambient temps between 50-60 outside air temp using either method.

Never reheated an whole one my guess would be no hotter then 325 and wrap the pan tight with foil to keep the liquids in. Only heat to around 160ish then shred.
I don't have either WSM yet, my advice is also go big or go home 22.5" for sure. Your got some money tied up in the controller spend the money and expend your room. I hear these smokers hold temps really well using the minion method there's actually cheaper routes for controllers but I'm cheap...
They just did a second update on August 11th since they butchered it a couple weeks ago. It's already improved greatly and I'm hearing from Facebook groups they will continue to do updates getting old features back up and running.

That makes since now that you mention that I've come across a post sometime ago stating the guy leaves his brownsugar separate from his other spices until ready to use.
