    Well, been dialing smoker thermostat in with Mav...it's cycling between 147 and 163. Is that a "normal" temp swing? Water bowl is filled with sand, MES has no insulation on bottom, seems like there should be some?

    Got the Mav from Todd, great service! Very quick turnaround. Trying it out smoking jerky in my MES. I am having problems with smoker probe high temp setting. Default is 176, I need 155. I can increase setting, but can't decrease down to 155. What am I missing? Read the instructs 6 times!

    Ling, there is no inlet....working on a mailbox mod amzs generator with 3" output. Chef, I think that is spot on, should help with eliminating the right corner hot spot, too. Mail box mod: thinking of removing grease trap from underside, and replacing with flat mailbox fitted with amzn 5X8"...

    Getting to know my new smoker, and reading the info on here has really helped! My MES doesn't have the "butterfly" vent on the top, just a 1/4 inch hole in back right corner. Wondering if I should modify by adding some sort of exhaust outlet in top or back? Thx for any thoughts...

    I gave my neighbor a couple of spare rods and reels for him and his son. He just happens to be a butcher at Safeways. So he stopped by with 6# of top round roast, sliced! Sliced too thin IMHO, almost see-thru. So I got the marinade ready and got ready to smoke. Doing half of meat today...

    I found the brine recipe on the forum here. Consumption report: Taste : **** Texture: **** Flavor: **** Next time I think I'll preheat to 400 to compensate for big drop, and slow recovery time. Dropped to 200, took til 4:45 to get back to 250... Good first smoke!

    3:15 in Arizona....running a little late :0) Bird just went into 275 degree MES, preheated for an hour. Mesquite in chip bowl, watching for TBS. Brined in Families Favorite Brine and rubbed with EVOO AND Bubba Chix Rub halved. More to follow, thanks for any tips or input! AZBullfrog

    I thought I would post my 1st attempt at smoking a bird. Any refinements in technique for the next go around are encouraged! Just bought a MES 30, unmodified so far. Spatchcocked 5# bird in brine until tomorrow, then in the smoker at around 2:00. Hopefully have a delicious dinner around...
