    i forgot about the safari! Ill prolly check that out. I looked at the brewery, looks great but i think they only have the one kind of beer. Id def go if they brewed a couple other kinds though. Im not a big fan of pilsners

    Wow! That looks amazing! If youre even in the area again make sure you go to lewiston, ny for the whirlpool jet boats. Takes you right into the rapids, its awesome. I think they also have it on the canadian side too but ive only gone to the one in lewiston.

    Will also be visiting Niagara Falls on the Canadian side as well on the way up.  Even though I live only 45 min away I've never bothered to check out that side, which I heard is better than the American side.

    Confused About Brisket

    Im near buffalo, ny. Beef has always been pretty expensive around here. Pork isnt too bad. One reason why i havent tried making brisket yet. All i can find are 8 or 9lb for $80

    Brisket prices are the same around here, about $9/lb. Though i dont know why your one local butcher is so cheap. Maybe has alot and needs to get rid of some?

    Im planning on trying to smoke a stuffed fatty like that. Pretty much exact same. Ground beef wrapped in bacon, stuffed with sausage, and instead of potatoes i was going to do rice. Should i cook the rice at all before stuffing it? And what smoker temp and how long? And to what IT temp?

    Pork Tenderloin tonight

    Wow 6 hours!!! I cook tenderloin all the time and usually takes about an hour fifteen minutes at around 250°f. I cook it to 140 and wrap and rest for about 15 min to get to 145. What temp did you cook it at and what was the IT when you took it off?
