    I have found, at least here, that the Publix RO tends to be a little more consistent in size and shape, than the Walmart RO, but there's no denying $.60/lb for lump, so I use it quite often.

    Agreed. I'm still eating USDA Prime NYS for ~$5 a meal as well. I've been paying right around $10/lb for Prime ribeyes or Prime strips. And I've adjusted to better quality meat, so I'd rather have a smaller portion (8oz portions) of better meat, more often, than having a large Choice steak once...

    Pecan is one of my most versatile woods I use.  I use Pecan or Apple almost exclusively, and have tried my share of woods as well.  Can't go wrong with Pecan buddy!

    Not a bad price - well done. We pay about $7 and change for USDA Prime. I would just cut it to your desired thickness. Make a couple roasts, a couple of thick RE, and then trim to your specs. At least that's how I did it.  Good luck - and again - nice score. :)

    I toss my chips. Can't burn them (burn time is only minutes, since they're so small). Dust? Just don't inhale it.  The only thing I use from a bag of lump is the charcoal. Dust/chips are left in the bag and tossed.

    Just my opinion -  "estimate" 30 minutes per pound. I don't cook by time - I cook by temp.  the lower the better, if smoking. 225 if you can. Pull with IT of 130-140. It will be red/pink, but a roast is much different than 130 in a ribeye steak.  S&P are excellent. No need to rub anything...

    That's what I do...  Same vents and all. Maybe, you are closing down too soon, and smothering the young fire. From the time you light the cubes, to the time you start closing down the vents, how long is it typically taking you?

    I see your having trouble. Why aren't you able to keep it lit for more than 3 or 4 hours? Can you take a picture of your bottom/top vents when you are smoking? Are you using charcoal? How are you lighting?

    Absolutely. Don't do anything different. Add some quality lump, light in one spot, and ta-da! Many users report going 30 hours on 6lbs of charcoal.
