Re-discovered my ECB today. Thought I had pitched it last year. Had to clean her up and purchase some supplies. Just thought I would bring the thread back to life since my ECB is back from the dead.
I have the same issue. Very tough to maintain "Smoking Temps" if you start off with wrong charcoal load. Mine has the mods done except for the raised charcoal pan. I use the minon method but if you add a full chimney to an equel amount of coals, you will be at a steady 350 for 2+ hours. I...
Thanks. I made some of the Mods. Fixed the Coal Tray with some vent holes and a small grill. Also added a therometer to the lid. I did what I thought was the Minion Meathod, but used far too many coals.
Ill give it another shot next weekend and try with half the coals.
Well did some Baby Back Ribs yesterday in my Brinkmann. I did the 2-2-1 and it came out nice but slightly over done. First, I had a heck of a time keeping the temp stable. Shot up to 400 and couldnt get it below 300 for over an hour. Think I had too many coals on it.

Recieved new smoker for the 4th. Discovered its an ECB from reading the SMF. Coming to you from San Diego Calif. Plan on a few mods this week then its off to smokin.
