Suckling Pig - Time per Pound?

500 Gallon RF newbie build
The top of my door opening is 3" front of TDC of the smoker. The hinge pins are centered. Like Dave said it does not matter. Just open them to where you want when unloading. Get some cardboard to make a temlet and lay it out. Then close the door and make sure the weight is behind the hinge...- rasimmo

Found Tank New Build
I used 3/4 x 9 for my racks too. The frame is 1" x .120" wall square tubing. I put the tubing 16" apart for addes support, worked out good that way with 48" wide grates. I have never heard of any type of poising from steel cooking surfaces. I have eaten a lot of food off of a steel grate grill...- rasimmo

I say continue on as planned. The thunderstorms may come, but they don't usually last too long and the sun will come out. Part of the day might be bad, but I don't think it will be a total loss. My door gap changed after it cooled from the first fire in it. I ran it up to about 500 and ran it between there and 200 for 2 days. The door gap changed some after that. I would do that before I tried to fix the existing gap. It may change the location the clamps need to be. I have read here...- rasimmo

The pig turned out great. Smoker holds temp without adjustments. Just add a piece of wood about every 45 minutes or so. The bottom 2 thermos will run about 5 degrees apart.
