    Yea I've seen several of his videos...he makes some good looking briskets!! I've been looking for an excuse to go that way some day to try one lol. I usually do hot and fast too with my briskets and pork butts usually around 300-325 with good results.

    What he said buying quality is good advice to think about...I have gone through several cheaper offsets over the last several years but currently I'm saving for a good one because the next one I buy I don't want to have to worry about again.

I have noticed that my 18.5 wsm when first starting up does make very heavy white smoke no matter how I load it for first half hour or so...takes that long to get it up to temp anyway so I generally load my wood with the charcoal as it's just getting started and let it come...
