I think you may be cutting it a little close. I always do extra when doing catering jobs, I would rather have some leftover than to run short. Remember those 80 people are 80 potential customers, you don't want to run short to save a few bucks.

the recipe looks really good. I was surprised that it didn't have any garlic powder in it, but I put garlic in everything. Looks like a good starter recipe, gonna give it a try and add garlic. Then I will adjust from there.

I have my own recipe that I have perfected over the years. I usually use venison but was out so I substituted hamburger.
5 lb ground pork shoulder
10 lb venison
6 tbs Morton's tender quick
9 tsp garlic salt
12 tsp coarse black pepper
9 tsp mustard seed
6 tsp cayenne pepper
grind pork...
mixed up 15Lb of snack sticks about 3:30 today. In the fridge mixed every 10 to 12 hours. going on the smoker sometime Saturday. qview coming on Saturday.
I have also heard of this and wondered how it was done. Looks great except for the rice. Had to much as a kid and I just can't even stand the thought of it. thanks for the lesson on dishwasher fish. I will have to try it sometime.
If you have a bunch left, divide it into servings, put it in freezer bags and freeze it. I warms up great and can make a quick lunch or dinner in a pinch.
Am I reading this wrong or are you saying he charge $2.00 per person. Surely he didn't want you to know and just through that number out there. Cooking a whole hog is a lot of work, then throw in the ribs and sides. $200 over raw costs sounds way low to me. I wouldn't do it for that. I agree...
everything looks great, It would take me as long to type a story like that as it would to cook the meal. Oh yeah, and you used my favorite whiskey, the knob creek will go with anything.
