It's Thanksgiving so I try everything. Love all of it even the green bean casserole. The only thing I don't eat is the jello mold with fruit cocktail in it. I ate that stuff too much growing up. It's not that I don't like it , it's more about ratios on my plate.

I have cut the amount of charcoal in my WSM 22.5 for shorter smokes. I did 2 tri-tips with 1/2 of the ring filled. Cooked fine for 2 hours. But I agree with the concept of charcoal is cheap (Kingsford) but lump charcoal is not .
I bought a set of Anolon cookware about 8 years ago. So far they work very well. Last Fall I picked up some Henkel frying pans from Costco. They were nice, but one year later and they are starting to wear. My kids are hard on my cookware. The only pan they cannot use is my cast iron skillet...
Nothing as good as a dizzy chicken. I will try the lidless version next time. The only wood source I have for splits is the bundles they sell at the grocery for firewood. Wonder if I can use that. Oak chunks are impossible to source around here.
Charles, been in the same boat since '79. Got busted up by a Mac truck. I was a real sight. Been in pain evr since to one degree or another. Had 13 broken ribs due to the accident. Any rain? I can predict it. Pain sucks, and I abhor operations on myself. Best of luck and a speedy recovery.

Just as a follow up. Due to this thread I purchased the Work Sharp Mk2 this past weekend. Within 2 hours of unboxing every knife in my kitchen is the sharpest it has ever been since new. Loving this sharpener. All my Henkel's are razor sharp even the sandwich knife.
Yessir. I don't reverse sear. It looks uncooked almost when it hits 130. But thats the way I roll.
