    What's your favorite way to do pork tender loin?

    I usually do 4 tenderloins at a time. I marinade overnight in sesame oil, soy sauce, spring onions, shiracha chili sauce, brown sugar ,honey, and black pepper. Roast in the oven @ 350 for 45minutes till temp hits 140. Slice thin serve with rice and some veggies ,(usually broccoli). Been doing...

    Man I love Gyros, kebab, shwarma and Al Pastor. If I was to buy this I would be tilting the scales at "Hippo". If I had the space in my kitchen I would get this today. Sadly, I cannot get anymore cooking gear in that small room. Very tempting though.

    Well done Mr. Whipple! Did you marinade the bird? The marinade is crucial for the flavor IMO. It helps to get a really nice tender, moist chicken. Douse it in the Aji Verde and watch it vanish. Very happy you tried this, I feel like a contributor.

    Glove Recommendation

    I too use welders gloves. For pulling I just use my bare hands, they get hot but eventually calm down. I used to swear by the Black vinyl gloves, but they started to crack and allow the hot stuff to get through. Don't use them anymore.

    One thing I learned early. You need a designated fish smoker. The smell never goes away.
