Agree on the water pan for the drip pan. The exhaust wide open with damper wide open will only get smoker up to 150 on temp. I think made exhaust way to big, even though I followed the bbq calculator.
Day one; Pressure wash inside of smoker. Then with 15lbs of charcoal heated smoker up to 500 degrees to burn any unwanted smell, oil from the steel etc.
