    My High Smoke and low smoke both work as intended on the Camp Chef STX. The above image of the billowing white is not good. Looks like its starved for air flow. Perhaps your fan is faulty? I'd get on the horn with Camp Chef, i'm sure they'll make it right.

    It's not going to smoke continuously if thats what you're getting at. It cycles when the pellets are pushed into the fire pot. If you're above 250 you wont get much smoke on any pellet grill.

    I made this this morning for the first time. It is delicious but i lessened the cayenne and Black Pepper by about half and has the right bite. Full recipe would go untouched in my house. Great recipe!

    Jerky on a GMG?

    I've smoked jerky on my Camp Chef STX with great results. It's definitely doable to make better than store bought quality. I smoke mine in the 170-190 range, comes out great.

    Kruizer, i dont comprehend what the chimney adjustment would do for that issue. Do u always do 321 method on babies? Most do 221. You may be drying out the surface at 3hr smoke. Do you use a binder for the rub? Perhaps spritzing with a sugar base liquid might help too. No matter what, a stick...

    need help - Internal temperature not accurate, probably user error

    If you haven't yet, you need to test the probes in Ice water and in boiling water. Boiling should be a 212 F, and Ice water at 32 F. If you're anymore than 2-3 +/- on those, call the dealer to get new probes. Sounds like the probes are faulty.

    Yes thats correct. Smaller temp swings, more smoke flavor in my food, better holding temps. I have smoke in single digit weather. I love my Camp Chef.

    I put the gasket on the lid only. All sides. I suppose you could do it on the grill too but i think that would be overkill.

    It will fluctuate between 170-200. That is the range for low smoke. High would be 180-225. You can try a water pan to bring it down more if needed

    As stated, those swings are normal as mine does about the same. When im up past 275 my swings are typically even tighter. When it is low in teh 200-225 is when I see the +/-20 change but food still cooks perfectly so far.

    Beef tenderloin on the CC STX tonight. It was deeeeelish. Seared it on my gas grill to finish. Was a little more done than i prefer but little ones dont dig red/pink meat,....yet.
