It's a propane masterbuilt xl on the outside, but it's been somewhat modified and is a quasi-stick/quasi-gas burner. I'm smoking and not grilling (mentally, the pivot point is 350 degrees to me) the target temp is 275-300, but it seems to be running hot right now; it's at 325. -

Ok, so I spatchcocked a 6lb yardbird yesterday, mixed up my rub and buttermilk, and have left the ol' girl chill for the past 24 hours. Do I put her booby up or booby down on my (vertical smoker) rack? Estimated smoke time? Recommendations forth skin to "bite through" skin? Here's a pre-soak... -

FINALLY!!! Pit stayed steady... My help, not so much!!! But it's been a great day, though... I planted a raised-bed garden, played with my baby chicks, played with pups, got a new roof on the shed for the chicken coop, got sunburnt to hell... Yep, it was a good day :) -
