I like Magic Dust on ribs, but to my taste it is a bit weak for a butt. Don't know why; it's just not as flavorful as I like.
This is one rub I've used on butts and liked a lot:

Yeah, I've found that with 2-3 chunks you'll still have some smoke after about 4 hours.
Don't think you'll add a lot of smoke flavor after that anyway.
A couple of excellent comp smokers have told me that if you want to contend you have to have a sauce with a fair amount of sweetness, which would pretty much let me out because I can't stand sweet sauce.
If hickory and mesquite are your only choices, I'd definitely choose the hickory, but I really prefer fruit woods (apple, cherry) for poultry.
If you wish to bump the temp up to 275, 300, even 325, it will work fine for chicken/turkey.
My advice is that however you do them this time, try a slightly different method next time, and another slightly different way the time after that, until you achieve what you consider perfection.
As for a vinegar mop, I wouldn't use pure vinegar, but including some vinegar along with apple...
These are my favorites, too, although to me it seems more important to get the right amount of smoke ("right" being a matter of taste) than what kind of smoke you use.

It didn't ask how much barbecue you eat. I figure that has either knock off a few years or add a few, but certainly makes whatever years you have a whole lot more enjoyable.
I've had one for about a month and no problems yet, but a sealed ziplock inside might be the answer to coming unsealed. But ID would think you'd have to use a ziplock smaller than the bag, which might cut way down on capacity.
Mine's too obvious to need any explanation.
