    I think this must be the smallest one, but unless you plan on feeding a lot of people it is plenty big. (I've heard that the Walmart model isn't exactly same as those at Bass Pro Shop; lighter metal, but it works fine for me.) At $74, buy 'em all.

    First thing you want to do is check the ET-73 for accuracy. Boil some water, stick the probe in it and see if it shows 212. I'm betting that it will be pretty close. If that's the case, go with the ET-73's reading and ignore the installed thermomemter. Don't have any experience with your unit...

    Anyone prefer, Gasp... Grilled ribs?

    Before I got my smoker, I had a recipe for ribs braised in a foil packet in the oven, then finished on the grill. Not as good as smoked IMHO, but not bad, and those who like "falling off the bone" ribs love them. My wife thinks they're as good as those from the smoker.
