So, I want to hold temps around 110*. Solaryellow's post about chipotle seasoning from smoking ripe jalepenos is enticing, but I don't know how to get such a low temp in my WSM.
I used the search tool for the forum, without much result. If I missed the post/sticky, point me to it.

Solar, this looks so cool! I really want to try this. If I smoked them in my WSM at 225*, then put them in the dehydrator, would that get the job done?
Ever since my family devoured my pulled pork and fatty, they've been beggin for more (i'm the only smoker in the family). So, I decided to surprise my dad with some spare ribs. My first try went smoooooooth :) I tried a brisket along with it, though it went.....less than smooth...lol tasted...
