If it were up to him I'm sure he'd hire you! He's a veteran and his store hasn't been good about hiring quality help.
As far as beef backs go, sounds like you and Bear are in the same boat. And honestly if I didn't have my connection I would be too!
The thing I like about them is at that price, they're good practice for a newbie like me. I can experiment with different rubs and methods without worrying if something goes wrong. And when it goes right, there is a delicious reward!
Thanks! I normally don't wrap. Or if I do, I unwrap and cook a bit longer. When I unwrapped these they were where I wanted them as far as tenderness goes so I just went ahead and pulled them so they wouldn't get over done.
Despite the temps being in the low 20's I had the urge to get out and smoke something. I had a bunch of tree limbs to chop up from a storm a few weeks ago and figured if I have to be out doing that I might as well get something good out of it! My step dad is a meat cutter and his store doesn't...
My stepdad is a meat cutter. His store doesn't actually sell these but employees get them cheap. I got 12 4 bone sections for about $1. For that price I jump all over it but it's not something I go out of my way to buy.
Alright everyone...what went wrong here?

They stalled at 150, which was about 4 hrs into the cook. I foil wrapped them and put them back on. They climbed slowly up to 195 before seemingly hitting another...
Welcome! I love this forum. There is so much to learn from all these guys and no one ever makes you feel like you've asked a dumb question! Looking forward to your contributions!
He's the hardest working of them all, and loyal to boot! Been at the same store almost 25 years. He's good at what he does and now that I'm into smoking meat, he comes in handy!
I am also doing smoked chuck roast but will be pulling them for nachos and sammies. My wife makes a killer bacon and onion dip, so we'll have that too. My step dad is a meat cutter at a local grocery store and I got a killer deal on beef back ribs. I know there's not a ton of meat on those but I...
I'm from KC and most people I know are still in a funk from the AFC championship. I haven't heard of any big parties and I certainly don't feel like throwing one.
I'm staying low key this year. Probably will just be me and my wife and maybe a couple friends. Not sure yet. Weather is supposed to...
What do pork butts usually run in your region? My local Walmart has them for $1.97/lb and my local grocery has them at around $2.97. These are just regular prices, not on sale.
