I would go with what was mix in it. Pork, cook to pork done. I mix my fatties 1/3 beef,1/3 pork, Buffalo1/3.When I cook venison I mix with ground pork 70/30 lean to fat and like Pineywoods and Richtee stated and I agree cook to 165* internal and foil to rest....I want my game done but not dry.
Well Yes, about any meat can be a fattie. I make 1/3 ground pork sausage(store bought),1/3 ground beef(70/30) and 1/3 ground buffalo. I have used bratwerst, Italian sasuage,breakfast sasuage. Also I have used mortons tender quick 1/2 to teaspoon. Mix in with the meats over night in fridge cook...
Our prayers are with ya and the Mrs pops. My daughter calls store bought sausage cheater sausage. She likes the kind i make for her....some of the fondest memorys we have are hand stuffing sausage in a antifreeze funnel. Bt thats a new story...

1. recipe rub no salt
2tbs chili powder
2tbs Tones garlic & herb (sifted to take out the big stems)
2Tbs paprika
2tbs powered onion
1tbs black pepper
1tbs williams sauage seasoing- no salt or( or tyme ground) this is a good one that many like but it is a spring board to add or take...
Great to here ya Smokeing...it really can get the family together...sounds like a good time was had by all...Our family is sorry to hear of your loss...but reading, and posting that is one fine way to learn..pick the brains of some great BBQ cooks and a few guy that just burn meat...
