I have decided to smoke a whole bird this year and I have some questions!
1 - my bird is 13#s. Is that to big?
2 - I would like to brine this guy. When do I need to start before smoking?
3 - do you guys add anything in the cavity or leave it open?
4 - who loves this holiday? ...
I smoked with mesquite for 5 hours until they had a great bend. I used this recipe for the sauce which i mopped up every half hour at hour 3. tender and flavorful. Also smoked the mac & cheese.
