    I've always tried to pick from the thicker spots and leave the thin side up. You might try some bacon in those spots.

    Do you know what the temp range is for that smoker? I looked it up and looks pretty cool. If the wind and snow from Saturday quit, on Sunday I'll be smoking a rack of ribs, a couple of fatty's, my first chuck roast and possible ABT's.

    I'll have to try the pam next time. Some put it back in the fridge for an hour or so after you flatten it, but I usually don't have that much time.
