Did you use "fresh" tilapia or previously frozen? Around here all we can get is the frozen stuff. Last time I tried results were not what I expected although it was not tilapia.
Currently using a dehydrator I have a Nesco FD75 that has heat. It has done a good job so far.I kind of think the salt levels don't need to be altered and I'm not above having to have an extra beer or so if the batch is a little salty as a result. Guess I will have to experiment. Thanks

Don't know what type of smoker you are using but the last time I used my offsetsmoker in a light rain the water tends to cool off the smoker and made it difficult to maintain temperature. If you can try to keep the rain off the smoker.
