    First Fish Smoke

Did you use "fresh" tilapia or previously frozen? Around here all we can get is the frozen stuff. Last time I tried results were not what I expected although it was not tilapia.

    Jerky spices and cure question

Currently using a dehydrator I have a Nesco FD75 that has heat. It has done a good job so far.I kind of think the salt levels don't need to be altered and I'm not above having to have an extra beer or so if the batch is a little salty as a result. Guess I will have to experiment. Thanks

    Jerky spices and cure question

I am new to making jerky and have only used packaged mixes so far that have a cure pack and a spice pack. I have seen some different recipes for spices that don't use cure#1 and was wondering if I use one of these recipes, would it be wise to add cure#1 (in the proper amount per pound of meat of...

    Smokin In The Rain

Don't know what type of smoker you are using but the last time I used my offsetsmoker in a light rain the water tends to cool off the smoker and made it difficult to maintain temperature. If you can try to keep the rain off the smoker.

After that at approximately 1/4" for the first two 3/8" next 1/2".Fired it up last night as a dry run and measured temps approximately 1/3 from...

Oklahoma Joe Original tuning plates question

I may not have explained it well but what I planned on doing was using the bottom part of the baffle as the starting point to lay out the tuning plates, thus not restricting the flow. The baffle is not very wide only about 2" so it would not need to be cut. And yes I can raise the grate up about...

Oklahoma Joe Original tuning plates question

Thank you. seems like it is more a trial and error issue than anything. So with that in mind I will start tweeking the improvements. Off set smokers are new to me but I really like the challenge of "trying" to get it right.Gonna have fun and frustration trying though.

Old Original Oklahoma Joe smoker tuning plate question

Thank you. I already have the metal and before I started messing with things I thought it a good idea to seek others help .Hope to make the plates this weekend and am shooting for them to be about 4" below the grate when I elevate the grates about an inch. This will leave adequate room under the...
